
Sea Salt Shortbread
100% organic whole wheat flour blend (Monad & Khorasan wheat) gives this shortbread its signature sandy, crumbly texture. It's got a subtle nutty flavour and a pinch of flaky sea salt to balance the sweetness. Always the most popular cookie, it's unlike any other shortbread.
The original recipe was inspired by the community of artisan food makers I met at Leucadia farmer's market during my time in San Diego. Some bread bakers introduced me to a variety of heritage grains I'd never heard of—I immediately started experimenting and this shortbread recipe was born! As Dawn Woodward (of Evelyn's Crackers) puts it best, flour is flavour, I hope you give it a try.
