NZ Yuzu Marmalade

A seasonal special project! This marmalade is made with just organic cane sugar and organic New Zealand yuzu- a Japanese citrus variety nurtured and grown by Neville (NZ Yuzu) in Horowhenua. It takes many years before you get a decent harvest, and when you go to pick the fruit you’ve got to fight the many sharp, spiky thorns protecting it.

Yuzu has the most beautiful fragrant aroma, it's hard to describe without picking up the real fruit, zesting the peel to release its scent. There's very little juice in each yuzu, maybe a tablespoon perhaps? The vast majority of its distinct, intense aroma and floral flavor is packed into the essential oils found in its zest. And more than 20% of the weight of a fruit is in its seeds—definitely a labour of love to remove before slicing, marinating in sugar, and cooking to a beautifully set marmalade.
